When SIMS 3.5 is fully installed, sendmail is automatically removed from your system. However, if you are installing an stand-alone (pure) proxy, sendmail will remain on your system. See Section "Removing sendmail for Pure Proxy" in Chapter "Post-Install Configurations" for information on how to manually remove sendmail from stand-alone proxy servers (not installed on a SIMS server).
