How can I see a snapshot of an employee’s basic information such as hire date, position, manager, department, similar to the Employment info page?

Selecting an employee from search results opens that person's Person Activity Center, where you can view this information through the Employment Info quick action, which is in the Redwood experience. You can also select the work anniversary event, if it's available, and view this information.
