How can I display more than one pending activity in the Activities Panel?

Because of the limited real-estate, the Activities panel provided by Oracle shows only the most current pending activity and the latest activity history. To see more pending activities, salespeople click the View All Activities link.

You can create panels to show more pending activities using Oracle Visual Builder Studio, however.
