A surcharge is an extra fee applied to a guest check total to cover various restaurant costs. For example, a restaurant might charge a fee to cover the cost of credit card payment processing. Many restaurants impose a surcharge for parties of more than six or eight people. Some cities charge a sugar tax for beverages that contain added sugar, such as carbonated soft drinks, sports drinks, and energy drinks.
