Menu item sales and performance report that shows sales data.

Description

The Menu Engineering report is a menu item sales and performance report that consists of a scatter chart and a table that show sales data. This report shows sales and contribution margins by menu item to identify which items are the most profitable. This report is for restaurants with add-on taxes.

Popularity

High if the percent of total quantity is greater than the average for all menu items or low if lower than the average.

Percent of Total Margin

Percent

Margin as a percent of total margin.

Profitability

High if the percent of total margin is greater than the average for all menu items or low if lower than the average.

Classification

Either star, puzzle, plowhorse, or dog.

Report Notes

Includes only items for which a selling price is associated; no zero price items or modifiers.

'High' popularity indicates that the % of Total Quantity is greater than the average for all Menu Items, and 'Low' popularity indicates that it is less than the average.

'High' profitability indicates that the % of Total Margin is greater than the average for all Menu Items, and 'Low' profitability indicates that it is less than the average.

'Stars' are high in popularity and have a high profitability. Ideally Stars should be your flagship or signature menu items.

'Puzzles' are generally low in popularity and have a high profitability. Puzzle dishes are difficult to sell but have a high profit margin.

'Plow horses' are high in popularity but have a low profitability. Plow horse menu items sell well, but don't significantly increase revenue.

'Dogs' are low in popularity and have a low profitability. They are difficult to sell and produce little profit when they do sell.
