About Standard Composed Menus

Standard Menus, also called Composed Menus, are the compilation of pre-existing Menu Items. These menus can be sold for an all inclusive price or as a group of separately priced items. Revenue Types must be configured before creating Standard Menus.

To access the Menu Composition screen, select Configuration > Catering > Standard Menu Setup. The screen is also available when you select the View button from the Select Menu screen.

Five main areas of this screen are available for viewing and/or modifying:

  1. Composed Menu Class List of Values
  2. Composed Menus Grid
  3. Revenue Types Grid
  4. Composed Menu Details Grid
  5. Standard Menu Items Grid

Search Criteria

Property. (Available in a multi-property environment) Select the property to display standard composed menu information.

Show Inactive Menus. Display menus that have been marked as inactive. This option is not selected by default.

Screen Overview

The following sections appear on the Standard Menu Setup screen:

1. Composed Menu Class List of Values

The Composed Menu Class list of values allows you to select the category (class) of composed menus to display in the Composed Menus Grid. Each composed menu is linked to a Composed Menu Class.

2. Composed Menus Grid

The Composed Menus grid shows the menus that are associated with the Composed Menu Class selected from the Composed Menu Class list of values.

Fields

Menu Name. The descriptive name of the menu.

Price. The total sales price of the menu.

R. An X appears in this column if there is a restriction placed on the menu (e.g., minimum number of attendees, only offered during a particular season, etc.).

Serving. A menu can be served "per person" or "per table". Calculation of the Internal Quote and the Cost will differ for a per person menu and a per table menu.

W. Only visible when the license code Webservices Sales & Catering WCS_<version number> or the Webservices Conference Center WCC_<version number> is active. The W column is also available if the WCS/WSS license codes are not active, but the application parameter Blocks > Function Space Config is active. An X in the column indicates the menu is Web Bookable.

3. Composed Menu Details

Displays the menu items and details comprising the menu selected in the Composed Menus grid.

Fields

C. The course number.

O. Order number.

Name. Name of the Menu Item attached to the highlighted Menu.

D.F. Demand factor of this Menu Item.

Unit Price. Sale price of this Menu Item.

Rev. Type. Revenue type attached to this Menu Item.

Container. Container for this Menu Item (if applicable).

Portion. Portion for this Menu Item (if applicable).

Inc. An X in this column indicates whether this Menu Item is included in this menu's price.

M. An X in this column indicates that the Menu Item is mandatory. This option is available for multi-choice menus only. This item always appears on a multi-choice menu (e.g., beverages, bread and butter). When choosing the menu, you will not have to explicitly select this item. Note: The Inc and the M columns can be directly edited in the grid. To modify either of these columns, you can either click on the column or select the Edit button with the selected menu highlighted in the grid.

4. Revenue Types

Based on the options selected for the composed menu and Menu Items chosen, calculations will vary.

Revenue Type. The Revenue Type codes that are being used in the menu.

Cost. The total cost per Revenue Type contained within this menu.

Int. Quote. The total sale price per revenue type of all the Menu Items that are marked as "Included" within this menu.

Margin. The variance between the Cost and Int. Quote columns in a dollar value and then a percentage value.

Price. Blank when the menu is being created. This is a writable field and this is where you will enter the Sell price of the menu per Revenue Type.

When the application parameter Catering > Consumption Menu Forecasting is set to Y, the menu Price can be configured for a consumption menu and subsequenly used for forecasting the consumption menu. When editing a consumption menu, the label Price changes to Forecast. See Catering > Consumption Menu Forecasting for more information.

Margin. After you have entered the Sell price, this field will be populated and is the variance between the Cost and Sell price in a dollar value and then a percentage value.

Totals. Total of each column.

5. Standard Menu Items

This section is a tree-view of all the existing Menu Items from which you can choose. The list is separated into Food and Beverage categories, then, as you select the expanding +s, by Menu Item Classes and finally Menu Items.

If the Menu Item you want to use does not exist and you have the permission to enter a new one, select the Set Up button, which takes you to the Menu Item Configuration screen.

Buttons

These buttons are available on the main Standard Menu Setup screen, depending on cursor placement.

Setup. (Always available) Go to the Menu Item Configuration screen to create and edit Menu Items within each class. This button is enabled for users with the Catering Config > MENU ITEM MAINTENANCE permission.

Copy. (Available when cursor is in Composed Menus) Copy a menu. A prompt appears where you can make your selection. When Others is selected, the Move to Menu Class screen appears allowing you to select the class to where you want to copy the highlighted menu.

Move. (Available when the cursor is in Composed Menus) Move a menu. The Move to Menu Class screen appears where you can select the class to where you want to move the highlighted menu.

Delete. (Available when the cursor is in Composed Menu Class field or Composed Menus) Delete a menu class or menu. A message asks if you are sure. Select 'Yes' to delete.

New. (Available when the cursor is in Composed Menu Class field or Composed Menus) When the cursor is in the Composed Menu Class field, and New is selected, you can create a new Menu Resource Class. See Managing Composed Menu Classes in this topic. When the cursor is in the Composed Menus grid, and New is selected, you can create a new composed menu. For more details, see Create a new menu.

Edit. (Available when the cursor is in Composed Menu Class field, Composed Menus, or Composed Menu Details) Select an existing Composed Menu Class in the Composed Menu Class field or a Menu in the Composed Menus grid to edit.

Managing Composed Menu Classes (Create or Edit a Composed Menu Class)

Use this procedure to create a new or edit an existing Composed Menu Class.

Or, using your right mouse button, click in the Composed Menu Class field. You will see three options.

- To create a new Composed Menu Class, choose the New option.
- To edit an existing Composed Menu Class, select the Composed Menu Class to edit and the Edit option. The Menu Resource Class - New or Edit screen displays.

Name. Enter the Name for the new Menu Class. It's best to create menu classes similar to your Banquet Menus (Buffet, Cocktail, Breakfast, Coffee Break). This will ensure that menu classes are easy to find when creating your Banquet Event Order.

Event Types. Select the event types for the new Menu Class. Select the event types for which this Menu Class should be available by default. The Select Event Types screen contains the Event Type, Description, and the Web column if the license code Webservices Sales & Catering WCS_<version number> or the Webservices Conference Center WCC_<version number> is active. The Web column is also available if the WCS/WSS license codes are not active, but the application parameter Blocks > Function Space Config is active. An X in this column indicates that the event type is web bookable; no X indicates it is not bookable via the web. Select the OK button to save and close the Select Event Types screen.

Inactive. Selecting the Inactive check box on the Menu Resource Class - New or Edit screen will select the Inactive check box on all of the Menus attached to this Menu Class. This makes them unavailable for selection but leaves them attached to events where they have already been booked.

Bookable via Web Site. Available when the license code Webservices Sales & Catering WCS<version_number> or the Webservices Conference Center WCC<version_number> is active. This check box is also available if the WCS/WSS license codes are not active, but the application parameter Blocks > Function Space Config is active. Selection of this check box will enable the configured menu resource class to be available for booking via the website. Selection of this check box is also propagated to any composed menu created using this configured menu resource class. If the composed menu being configured is assigned a menu class that has this check box selected, the composed menu will also have this check box selected by default. If the menu being configured is assigned to a menu resource class that does not have this check box selected, the check (X) will not be visible.

Once your entries are completed on the Menu Resource Class - New or Edit screen, select the OK button to save and close this screen. You are returned to the Menu Composition screen.

Delete a Composed Menu Class

Use this procedure to delete a Composed Menu Class.

- A confirmation message will appear; select the Yes button.
