Recipe Builder

After adding ingredients to a recipe, you can review the Nutrition Facts, Additives, and Allergens in the related subtabs. The Portions and Pricing tab allows you to define production parameters and simulate sales prices.

Nutrition Facts

On the Nutrition Facts tab, the Recipe Builder displays the accumulated nutritional values based on the nutrients assigned to the inventory items and sub-recipes used in the recipe.

Nutrition Facts are displayed in three views only after the recipe has been saved:
  • Summary: Shows the summarized nutrient facts by Nutrient Group.
    • Per Recipe
    • Per Portion
    • Per 100 Grams
  • Detailed: Shows the nutrient facts per main recipe ingredient.
  • Aggregated: Shows the nutrient facts per recipe ingredient, also listing the ingredients of sub-recipes.

Additives

On the Additives tab, the Recipe Builder displays the accumulated additives based on the additives assigned to the inventory items and sub-recipes used in the recipe.

Additives are displayed only after the recipe has been saved.

Allergens

On the Allergens tab, the Recipe Builder displays the accumulated allergens based on the allergens assigned to the inventory items and sub-recipes used in the recipe.

Portions and Pricing

On the Portions and Pricing tab, the recipe builder displays details about portion weight calculations and allows you to simulate sales pricing for the recipe.

Portions and Pricing are displayed only after the recipe has been saved.

Based on the yield calculation example in Recipe Details, the Portion Weight Calculation section displays the following information:
  • Calculated Total Weight: Displays the total weight of the recipe based on the selected ingredients and their quantities. In the example above, this includes all marinade ingredients and the meat for the entire recipe.
  • Calculated Weight per Portion: Displays the calculated weight per portion based on the previously calculated number of portions. In the example above, this value includes all ingredients used in each portion.
  • Production Loss %: Automatically calculated based on the calculated weight and the entered Yield Quantity. Since the example above was defined as 20 portions of 250 g each, the production loss would be 17.41%.
  • Weight per Portion: Represents the final weight per portion based on the previously entered values.
The Pricing section allows you to simulate the sales price for the recipe.
  • Sales Price: Enter the planned sales price.
  • Tax %: Enter the applicable VAT rate.
  • Net Sales Price: Automatically calculated based on the sales price and VAT %.
  • Cost of Sales (COGS): Automatically calculated based on the cost of the recipe ingredients.
  • COGS %: Automatically calculated based on the Net Sales Price and Cost of Sales (COGS).
  • Contribution Margin: Calculated as Net Sales Price minus Cost of Sales (COGS).
  • Contribution Margin %: Margin percentage based on the COGS %.
  • Markup %: Calculated as (Contribution Margin % รท COGS %) x 100.
